Welcome to Kusina ni Apolonia! Fresh, Local and Seasonal – this briefly sums up our criteria in selecting the food and beverages we serve here at Kusina ni Apolonia. Fresh! Only the freshest ingredients. We want to offer the freshest vegetables, meat, dairy products and beverages we can find. Ideally, we would like to grow everything we use here to guarantee the freshness of our ingredients. Failing that, we nurture our relation ship with our suppliers (preferably direct to the producers themselves) to ensure they only offer us their freshest produce. What we do currently. Grow our own herbs in small garden right at our restaurant. Make our pasta fresh everyday and flavor them with our herbs. We get our fish directly from a community fishing cooperative we ourselves organized in Northern Palawan. Our fish arrive here in Manila within 24 hours they are unloaded from our fishermen’s boats. They are gutted, vacuum packed from the moment they are unloaded from the boats, chilled and sent to Manila. More than ensuring their freshness, this guarantees that fish we serve are responsibly caught. The salad greens that we use are from suppliers who grow them in a hydroponics medium, and vacuum packed them to ensure they are fresh, pesticides and herbicides free. Our meat is sourced from big name suppliers who supply high-end restaurants and hotels and are known in the industry with their high standards of quality. In the near term, we will be growing our own lettuces, tomatoes, eggplants, peppers (hydroponics) and our vegetables from our organic farms. In the long term, we will also raise livestock and poultry in a free range farm that also produces its own organic feeds. Local. We strive to use the best locally available ingredients. We want to bring to our dinning tables the best produce of our farmers. Currently we are using our very own Kesong Puti as an excellent substitute to Mozarella and a locally produced ricotta cheese. Its only when we cannot find local substitute do we buy imported products. Seasonal. A significant portion of our menu is seasonal. We will be adding and removing items from our menu to take advantage of the flavors we get from fruits and vegetables raised and harvested at the peak of their flavor. Cooking Style We use only natural ingredients to bring additional flavor to the food we serve you. Our fresh vegetables, fruits and meat are flavored only with herbs and spices. We make our own stock by slowly (4 hours) braising/stewing meats, vegetables and herbs in low flame. No MSG. We don’t use bouillon. Our menu are either prepared right when you order them or they are stews/braises that we cook in low flame for 4 hours to make them tender, bring out the best flavor in them and are best eaten a few days after they are prepared. We use olive and canola oil for our frying/sautéing. Extra Virgin Olive oil and Peanut Oil for our Salad. What you won’t find in our restaurant. Softdrinks, not even the diet one. Those supper sweet bottomless “iced teas” offered in most restaurants. No powdered juices and concentrates. No industrial cheese please, specially not on pasta and salads. No instant coffee. No sweeteners on drinks except honey and muscovado. What you will find instead. Freshly made juices, espresso base coffee drinks(cappuccino, latte, americano) from our very own coffee farmers, and herb tea infusions. We also serve Café Mauro Italian medium roast coffee as well as Coopers beer( No preservatives, No additives). Our honey is harvested from the forest of Northern Palawan by a cooperative we ourselves organized.
